Over-ear and in-ear headphones: which are better for everyday use?

When buying headphones, it is easy to focus on the numbers. Frequency response, driver diameter, Bluetooth codecs or active noise cancellation can take up more space than a description of how the gear actually performs in everyday use. The problem is that two models with very similar specifications can deliver completely different impressions after just a few minutes of listening.
